Drain the tofu and press out any excess moisture with paper towels. Cut into thick slices, about 2 cm thick, so they are stable for grilling.
In a bowl, combine the olive oil, soy sauce, minced garlic, smoked paprika, honey, lemon juice, and black pepper.
Place the tofu slices in a shallow dish and pour the marinade over them. Let it marinate for at least 15 minutes, or up to 1 hour in the refrigerator for optimal flavor absorption.
Preheat the grill to medium-high heat and grease the grates with a little oil to prevent the tofu from sticking.
Place the tofu slices on the grill and cook for 3-4 minutes per side, until grill marks appear and they are slightly crispy.
After grilling, sprinkle with freshly chopped parsley and serve immediately as a side dish or a standalone main course.
