Slice the baguette or ciabatta into approximately 2 cm thick slices. Brush them with a little olive oil to help them crisp up nicely on the grill.
Wash the tomatoes and dice them finely. Finely chop the garlic and fresh basil as well.
In a bowl, combine the diced tomatoes, garlic, basil, balsamic vinegar, salt, black pepper, and smoked paprika. Let it sit for 5-10 minutes to allow the flavors to meld.
Preheat the grill to medium-high heat, then place the bread slices on the grill rack. Grill them for 1-2 minutes per side, or until golden brown and toasted.
Once the bread slices are grilled, rub them with a halved garlic clove for extra flavor.
Top the grilled bread with the tomato mixture, then drizzle with a little extra olive oil before serving.
Serve warm as an appetizer or a light summer meal.
