Rinse the jackfruit, then shred it into smaller pieces by hand or with a fork.
Finely chop the onion and garlic. Heat the olive oil in a skillet over medium heat.
Sauté the onion for 2-3 minutes, then add the jackfruit and spices (smoked paprika, cumin, coriander, cinnamon, salt, pepper).
Stir in the BBQ sauce and cook for another 5 minutes, allowing the flavors to meld.
Preheat your grill to medium-high heat and place the spiced jackfruit on a grill pan.
Grill for 8-10 minutes, stirring occasionally, until the edges are slightly crispy.
Warm the pita bread on the grill for 1-2 minutes, then remove.
Fill the pitas with the grilled jackfruit, fresh parsley, and a dollop of vegan yogurt, then drizzle with lemon juice.
Serve immediately, optionally with fresh vegetables or extra BBQ sauce.
