Preheat your grill or a skillet to medium heat. While it's heating, halve the hot dog buns lengthwise, but don't cut all the way through.
Brush the hot dogs with a little olive oil, then season with salt, pepper, and rub with finely chopped garlic.
Place the hot dogs on the hot grill or skillet and cook for 3-4 minutes per side, until lightly browned and grill marks appear.
During the last minute, brush the hot dogs with BBQ sauce and let it caramelize slightly on the surface.
Grate the cheddar cheese and slice the jalapeño pepper into thin rings.
Toast the inside of the buns in a pan or on the grill until slightly crispy.
Place the cooked hot dogs in the buns, then sprinkle with grated cheddar cheese, crispy fried onions, and fresh jalapeño slices.
Serve immediately with extra BBQ sauce and French fries or coleslaw.
