BBQ mayonnaise potato salad served

BBQ Mayonnaise Potato Salad

BBQ Mayonnaise Potato Salad is an exciting, smoky twist on the classic potato salad. It's often served at American barbecues as a creamy, flavorful side dish, made special by the rich flavor of BBQ sauce and the silkiness of mayonnaise. Smoked paprika and mustard add an even deeper flavor dimension, making it a perfect accompaniment to grilled meats or enjoyable on its own. If you want a little extra crispy texture, try it with toasted bacon crumbles or grated cheddar cheese!

    Preparation Steps

    1

Wash the potatoes and boil them in their skins in lightly salted water for 20-25 minutes, or until they are completely tender.

    2

Once the potatoes are cooked, drain them and let them cool. Then peel and dice them into small cubes.

    3

Finely chop the red onion and slice the green onions thinly.

    4

In a large mixing bowl, combine the mayonnaise, BBQ sauce, mustard, garlic powder, smoked paprika, salt, and pepper.

    5

Add the chopped onions and diced potatoes, then gently toss to coat all ingredients with the sauce.

    6

Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

    7

Before serving, sprinkle with fresh green onions and serve cold alongside grilled meats or sandwiches.
