Preheat your grill to medium heat. Place the ribs on the grill and cook for 1 to 1.5 hours, basting frequently with BBQ sauce, until the meat is tender, juicy, and slightly charred.
While the ribs are grilling, prepare the vegetables: slice the bell peppers, zucchini, eggplant, and red onion. Drizzle with olive oil, then season with salt and pepper to taste.
Place the vegetables on the grill and cook for 5-7 minutes on each side, until they are tender-crisp and nicely grill-marked.
