Smoked tuna is a special fish dish, prepared with delight in a number of cuisines all over the world. It is popular in American BBQ culture and Mediterranean cuisine as the smoking technique gives the fish a deep, rich flavor. The slightly sweet and smoky flavors of the BBQ sauce blend perfectly with the natural aromas of the tuna. This dish is the ideal choice for barbecues, family dinners, or a light but special dish. Preparation Steps

    1

Thoroughly rinse the tuna steaks in cold water, then pat them dry with paper towels. Remove any skin or membrane.

    2

In a small bowl, combine the olive oil, BBQ sauce, garlic powder, smoked paprika, brown sugar, honey, lemon juice, salt, and pepper.

    3

Place the tuna steaks in a large bowl and pour the BBQ marinade over them. Toss well to coat, then let them marinate in the refrigerator for at least 30 minutes.

    4

Preheat the smoker to 195-210°F (90-100°C). Distribute the charcoal or wood evenly in the smoker to ensure consistent smoke.

    5

Place the marinated tuna steaks on a rack in the smoker and smoke slowly for 45-60 minutes, or until the internal temperature of the fish reaches 140°F (60°C).

    6

During the last 10 minutes of smoking, lightly brush the tuna steaks with extra BBQ sauce and continue to smoke for a few more minutes to allow the glaze to caramelize slightly.

    7

Remove the smoked tuna steaks from the smoker and sprinkle with freshly chopped parsley.

    8

Serve warm with lemon wedges, a fresh salad, or grilled vegetables. It's also an excellent choice with toasted bread or garlic butter.
