Grate the garlic and fresh ginger for a more intense flavour in the marinade.
In a medium bowl, combine the lemon juice, orange juice, olive oil, and honey. Stir until the honey is completely dissolved.
Add the soy sauce, grated garlic and ginger, then stir in the smoked paprika, chili flakes, salt, and pepper. Mix well.
Stir in the finely chopped fresh cilantro, which adds extra freshness and aroma to the marinade.
Place the meats or vegetables you want to marinate in a resealable bag or bowl, then pour the marinade over them. Toss to coat everything well.
Cover the bowl or seal the bag and refrigerate for at least 2 hours, or preferably overnight, for a more intense flavour.
Before using, remove the marinated ingredients from the refrigerator and let them sit at room temperature for 10-15 minutes to ensure even grilling.
