Thoroughly wash the potatoes, then pierce them a few times with a fork.
Rub the potatoes with olive oil, then sprinkle with salt and black pepper.
Preheat the oven to 400°F (200°C). Place the potatoes on a baking sheet lined with parchment paper and bake for 40-50 minutes, or until they are completely tender.
Once the potatoes are baked, cut a slit in the top of each and gently open them up to create a small hollow.
Fluff the inside of the potatoes with a fork, then mix with the BBQ sauce, smoked paprika, and garlic powder.
Fill the potatoes with grated cheddar cheese, then return them to the oven for 5-7 minutes, or until the cheese is melted and bubbly.
Before serving, drizzle with sour cream and sprinkle with chopped green onions.
