    Preparation Steps

    1

Soak the dried white beans in cold water overnight.

    2

The next day, rinse the beans and place them in a pot with water, bay leaves, and a pinch of salt. Cook for 45-60 minutes, or until the beans are tender.

    3

Meanwhile, finely chop the carrots, parsnip, and onion.

    4

Heat the oil in a skillet over medium heat. Sauté the onion and garlic until softened, then stir in the Hungarian sweet paprika.

    5

Add the sautéed onion mixture to the cooked beans. Then, add the sliced carrots, parsnip, and smoked sausage.

    6

Simmer the soup for another 20-25 minutes, or until the vegetables are tender.

    7

While the soup is simmering, prepare the 'csipetke' (pinched noodles): Combine one egg with 100g flour and a pinch of salt. Pinch off small pieces of dough and drop them into the boiling soup.

    8

Cook the soup for another 5-10 minutes, or until the 'csipetke' float to the top.

    9

    Serve hot with fresh bread.
