Prepare the vegetables: wash the lettuce leaves, slice the tomatoes and red onion into thin rings.
Season the beef patties with freshly ground black pepper and salt on both sides. Preheat a skillet over medium heat and cook the patties for 3-4 minutes per side, until a golden-brown crust forms.
When the patties are almost done, place a slice of cheddar on each and cover to let the cheese melt.
Toast the hamburger buns in a skillet or on a grill until the cut sides are golden brown and crispy.
Assemble the burgers: spread Dijon mustard on the bottom bun, top with the lettuce, cheese-covered patty, tomato slices, and red onion rings.
Add a dollop of mayonnaise on top, then place the top bun. Serve immediately with fries or a fresh salad.
