300 g Beef (thinly sliced)
1 kg Beef bones
400 g Rice noodles
1 Onion
50 g Ginger
1 rúd Cinnamon stick
2 db Star anise
2 tbsp Fish sauce
1 tsp Salt
10 g Fresh cilantro
1 db Lime
100 g Bean sprouts
1 db Chili pepper

    Thoroughly wash the beef bones. Place them in a large pot and cover with boiling water. Boil for 10 minutes. Drain the water and rinse the bones to remove any impurities.

    In a clean pot, add the beef bones, onion (cut in half), ginger, cinnamon stick, and star anise. Pour in 3 liters of water and simmer over low heat for at least 3 hours to create a rich broth.

    Strain the broth, then season with salt and fish sauce. Keep warm while preparing the other ingredients.

    Cook the rice noodles according to the package instructions. Rinse with cold water to prevent sticking.

    Slice the beef very thinly. Just before serving, place the beef slices directly into the hot broth to cook.

    To serve, divide the rice noodles among deep bowls, then ladle hot broth over the noodles. Top with beef slices, bean sprouts, cilantro, and sliced chili pepper. Serve with lime wedges.
