Beef Stew (Marhapörkölt) is one of the best-known and most beloved dishes in Hungarian cuisine, and a must-have for a true family meal. The dish is based on beef, which is prepared with rich spices, onions and paprika. The pörkölt is juicy and mouth-watering, and the meat becomes so tender that it almost melts in your mouth. Beef stew is served with many side dishes, but the most popular choices are fresh, soft nokedli or boiled potatoes.
The origin of beef stew dates back to the Hungarian Puszta, where farmers and shepherds cooked this dish over an open fire to make a nutritious, filling dish for long working days. Pörkölt is still prepared in many variations today, but the basic recipe has not changed: meat, onions, paprika, and a pinch of love.
Finely chop the onions and garlic. Sauté them in oil over medium heat until softened.
Add the diced beef and brown on all sides.
Stir in the Hungarian sweet paprika, season with salt and pepper. Pour in the water, bring to a simmer, then cover and cook over low heat until the beef is tender (about 2-3 hours).
Serve hot with nokedli (Hungarian dumplings) or crusty bread.
