Cut the beef into medium-sized cubes. Finely chop the onion and garlic.
In a large pot or Dutch oven, heat the sunflower oil over medium heat. Sauté the onion until translucent.
Add the garlic and stir briefly. Then, sprinkle in the Hungarian sweet paprika and stir immediately to prevent it from burning.
Add the cubed beef, salt, pepper, and caraway seeds. Sear the beef until it's lightly browned on all sides.
Pour in enough water to cover the beef. Reduce the heat to low, cover, and simmer for 1.5-2 hours, or until the beef is very tender.
While the stew simmers, cook the square pasta in salted boiling water according to the package directions. Drain well.
Serve the beef stew hot with the square pasta. Offer pickled cucumbers or other pickles on the side.
