Cook the beef over medium heat for 7-10 minutes, until fully cooked through. Set aside to cool slightly.
Melt the butter over low heat and let it cool for a few minutes.
In a large bowl, whisk together the flour, baking powder, salt, and black pepper.
In another bowl, whisk the eggs, then add the milk and melted butter. Mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined. Then, stir in the grated cheddar cheese and the cooked ground beef.
Preheat your waffle iron and lightly grease it with butter or olive oil to prevent sticking.
Pour a portion of the batter onto the hot waffle iron and cook for 3-5 minutes, or until golden brown and crispy.
Repeat the cooking process with the remaining batter. Keep the waffles warm until serving.
Serve sprinkled with extra cheddar cheese, and offer spicy sour cream or BBQ sauce on the side.
