In a bowl, combine the ground beef with salt and pepper. Form into four equal patties.
Heat olive oil in a hot skillet over medium-high heat. Cook the patties on both sides until golden brown and cooked through.
In a small saucepan, gently heat the pale lager and heavy cream. Gradually whisk in the grated cheddar cheese until you have a smooth and creamy sauce. Stir in the crushed garlic.
Thinly slice the red onion and caramelize in a little olive oil over low heat until sweet and softened.
Toast the inside of the burger buns in a pan or skillet until lightly golden and crispy.
Assemble the burgers: place iceberg lettuce on the bottom bun, top with a cooked patty, drizzle generously with beer cheese sauce, and layer with caramelized onions. Finish with the top bun.
