Mince or grate the garlic.
In a medium saucepan, melt the butter over medium heat.
Add the garlic and sauté until fragrant, about 1 minute.
Sprinkle in the flour and stir to combine, then cook until lightly golden brown, 1-2 minutes.
Pour in the light beer and cook, stirring constantly, for 2 minutes, or until slightly thickened.
Pour in the heavy cream and cook, stirring constantly, for another 3-4 minutes.
Stir in the grated cheddar cheese and cook over low heat until completely melted.
Add the Dijon mustard, Worcestershire sauce, and cayenne pepper, then mix well.
Season with salt and freshly ground black pepper, then cook for another 1-2 minutes to allow the flavors to meld.
Serve warm with french fries, nachos, or grilled meats.
