Heat the olive oil in a saucepan over medium heat.
Peel and finely chop the garlic. Add it to the olive oil and sauté for 1-2 minutes, until fragrant.
Pour in the tomato puree and stir well to combine with the garlic.
Add the beer and salt, then season with black pepper to taste. Stir well and let simmer for 5-7 minutes, or until the sauce has thickened slightly.
Once the sauce has reached your desired consistency, remove from the heat and stir in the grated cheddar cheese until it's melted and smooth.
Serve the sauce with grilled meats, pasta, or potatoes.
