300 g Beetroot
200 g Chickpeas (canned, drained)
50 g Rolled Oats
1 Onion
2 cloves Garlic
2 tbsp Fresh Parsley (chopped)
1 tsp Smoked Paprika
1 tsp Salt
0.5 tsp Black Pepper
2 tbsp Olive Oil
50 g Breadcrumbs
4 Hamburger Buns
4 leaves Lettuce
1 Tomato
2 tsp Mustard
2 tsp Ketchup

    Preparation Steps

    Peel the beetroot and grate it using a coarse grater.

    Rinse the chickpeas and mash them in a bowl using an immersion blender or a fork.

    Finely chop the onion and garlic, then sauté in one tablespoon of olive oil over medium heat for 5 minutes.

    Add the sautéed onion and garlic to the mashed chickpeas, then mix in the grated beetroot, rolled oats, breadcrumbs, spices, and chopped parsley.

    Thoroughly mix the ingredients. Form the mixture into 4 equally sized patties. If the mixture is too soft, add a little extra breadcrumbs.

    Place the patties on a tray and let them rest in the refrigerator for 30 minutes to firm up.

    Heat one tablespoon of olive oil in a skillet over medium heat. Cook the patties for 4-5 minutes per side, or until golden brown.

    Toast the hamburger buns in a dry skillet or oven.

    Assemble the burger: place a lettuce leaf on the bottom half of the toasted bun, top with the beetroot patty, a slice of tomato, then mustard and ketchup.
