Prepare the ingredients: drain the chickpeas and rinse them under cold water. Chop the cooked beetroots into smaller pieces for easier blending.
Place the chickpeas, beetroots, tahini, crushed garlic, olive oil, lemon juice, salt, and ground cumin into a blender or food processor.
Begin to purée the ingredients. Gradually add the ice water until the hummus reaches your desired consistency.
Taste and adjust the seasoning, adding more lemon juice or salt if needed.
Serve the hummus in a bowl and garnish with finely chopped fresh parsley. Drizzle with a little olive oil for a more appealing presentation.
