Divide the ground bison meat into four equal portions and gently form them into burger patties. Season generously on both sides with salt and freshly ground black pepper.
Heat olive oil in a skillet over medium-high heat. Cook the patties for 3-4 minutes on each side for medium-rare, or longer depending on your preferred level of doneness.
During the last minute of cooking, place a slice of cheddar cheese on each patty, allowing it to melt beautifully.
Slice the burger buns and lightly toast them in a separate pan with a knob of butter until golden brown.
To assemble the burgers, spread mayonnaise and ketchup on the bottom bun. Add a crisp lettuce leaf, a slice of ripe tomato, a bison patty topped with melted cheese, and a few thinly sliced red onion rings. Crown it all with the top half of the bun.
Serve the bison burgers immediately alongside crispy fries or a fresh, vibrant salad.
