Finely chop the onion and garlic. In a large bowl, combine the ground bison, breadcrumbs, egg, chopped onion and garlic, Worcestershire sauce, salt, and black pepper. Mix thoroughly to combine.
Form the mixture into four equal-sized patties. Slightly flatten them to prevent excessive shrinking during cooking.
Heat a skillet or grill over medium-high heat. Cook the patties for 4-5 minutes per side, until nicely browned and cooked through.
In the last minute of cooking, place a slice of cheddar cheese on each patty and cover to allow the cheese to melt.
Halve the hamburger buns and lightly toast the cut sides in a dry skillet.
Spread a little mayonnaise and Dijon mustard on the bottom bun. Add a lettuce leaf, followed by the cheese-melted bison patty. Top with thinly sliced tomato and the top bun.
Serve the prepared burger immediately, accompanied by french fries or other side dishes.
