Melt the butter over low heat, then let it cool for a few minutes.
In a large bowl, whisk together the flour, cocoa powder, baking powder, sugar, and a pinch of salt until well combined.
In another bowl, whisk the eggs, then add the milk and melted butter. Mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Preheat your waffle iron and lightly grease it with butter or oil to prevent sticking.
Pour a portion of batter onto the hot waffle iron and cook for 3-5 minutes, or until golden brown and crispy.
Repeat the cooking process with the remaining batter and keep the waffles warm until serving.
For the whipped cream, whip the heavy cream with the powdered sugar until stiff peaks form.
To serve, top the waffles with fresh or canned cherries, a dollop of whipped cream, and grate dark chocolate over the top.
