In a large bowl, combine the flour, dry yeast, sugar, and salt. Add the lukewarm water and melted butter. Knead the dough until smooth and elastic.
Cover the dough with a clean kitchen towel and let it rise in a warm place for 1 hour, or until doubled in size.
Divide the risen dough into 8 equal portions. Roll each portion into a long rope and shape it into a pretzel.
Bring 1 liter of water to a boil. Remove from heat and stir in the baking soda. This step helps to create a crispy crust.
Dip each pretzel into the baking soda water for 30 seconds, then place them on a baking sheet lined with parchment paper.
Crush the garlic cloves and mix with a little melted butter. Brush the pretzels with the garlic butter, then sprinkle with freshly ground black pepper.
Bake the pretzels in a preheated oven at 400°F (200°C) for 15-18 minutes, or until golden brown. Serve warm for the best taste.
