In a saucepan over medium heat, warm the apple juice. Add the cinnamon stick and cloves.
When the apple juice begins to steam, add the fresh blackberries and orange zest.
Simmer over low heat for 5-7 minutes, allowing the blackberries to release their juice and the flavors to meld together.
Remove from heat and stir in the honey until completely dissolved.
Strain the mixture through a fine-mesh sieve to remove the spices and blackberry seeds.
Refrigerate the cider for at least 30 minutes to chill thoroughly.
Before serving, top with sparkling mineral water and add ice cubes.
Garnish with a few fresh blackberries and orange zest. Serve immediately.
