Rinse the jasmine rice under cold water 2-3 times until the water runs clear. This helps remove excess starch, resulting in fluffier rice.
In a medium saucepan, combine the water and a pinch of salt, then bring to a boil.
Once the water is boiling, add the rinsed rice. Stir once, then reduce the heat to low and cover the saucepan.
Cook the rice covered for 12-15 minutes, or until all the water is absorbed. Avoid stirring during cooking.
When the rice is cooked, remove from heat and let it sit covered for another 5 minutes to achieve the perfect texture.
Meanwhile, in a smaller saucepan, gently warm the coconut milk, vanilla extract, honey, and lemon juice over low heat until the flavors meld together.
Carefully fold the warm coconut milk mixture into the rice, then gently fold in the blackberries. Be careful not to crush the berries.
Sprinkle with lemon zest and serve warm or at room temperature as a dessert or side dish.
