Whisk together the egg yolks, flour, salt, and a pinch of sugar.
Heat the milk in a saucepan over medium heat until lukewarm, then pour it into the egg yolk mixture.
Stir the grated blue cheese into the milk and egg yolk mixture.
Whisk the egg whites until stiff peaks form. Gently fold the whipped egg whites into the cheese mixture.
Grease a soufflé dish with butter, then pour in the cheese mixture.
Bake in a preheated oven at 350°F (180°C) for 20-25 minutes, or until the soufflé has risen nicely and is golden brown.
Once done, let it cool slightly before serving warm.
