400 g Fresh blueberries
200 ml Water
120 g Granulated sugar
2 tbsp Fresh lemon juice
5 Mint leaves (optional)

    Thoroughly wash the blueberries, then purée them in a blender until completely smooth.

    In a medium saucepan, combine the water and sugar. Heat over medium heat, stirring until the sugar is completely dissolved. This will take about 5 minutes.

    Allow the sugar syrup to cool completely, then stir in the blueberry purée and lemon juice.

    Strain the mixture through a fine-mesh sieve to remove any blueberry skin fragments, then pour it into a shallow dish.

    Place the dish in the freezer, and every 30 minutes, scrape the mixture with a fork to create a light and icy texture. Repeat this process 3-4 times, until the sorbet is completely frozen.

    Before serving, let the sorbet sit at room temperature for 5 minutes to make it easier to scoop. Garnish with fresh mint leaves and a few fresh blueberries.
