Warm the milk slightly, then mix with 1 teaspoon of sugar and crumble in the yeast. Let it stand for 10 minutes, until foamy.
In a large bowl, combine the flour, remaining sugar, salt, and vanilla sugar.
Add the yeast mixture, eggs, and melted butter. Knead the dough until it is soft and elastic (about 10 minutes).
Cover the dough with a clean kitchen towel and let it rise in a warm place for about 1 hour, or until doubled in size.
Divide the risen dough into 8 equal parts, then shape them into small balls or a braided form.
Place the shaped brioche on a baking sheet lined with parchment paper, then cover and let rise for another 20 minutes.
Brush the tops of the brioche with beaten egg to ensure a beautiful glossy, golden-brown finish after baking.
Preheat the oven to 350°F (180°C), then bake the brioche for 15-20 minutes, or until golden brown.
Let it cool on a wire rack, then serve with butter or jam!
