Cut the broccoli into florets. Slice the carrots and bell pepper into thin strips. Mince the garlic and ginger.
Heat olive oil in a wok or large skillet over medium-high heat. Sauté the garlic and ginger for 1-2 minutes, until fragrant.
Add the broccoli, carrots, and bell pepper. Stir-fry for 5-7 minutes, until the vegetables are slightly tender but still crisp.
In a small bowl, whisk together the soy sauce, sesame oil, cornstarch, and water. Pour the mixture into the wok.
Stir-fry for another 2-3 minutes, until the sauce thickens and coats the vegetables evenly.
Before serving, sprinkle with sesame seeds. Add extra soy sauce or chili sauce to taste.
