Freshly baked Eastern European bublik bagel

Bublik - Eastern European Bagel

Bublik is a traditional Eastern European pastry, popular in Russia, Poland, and Ukraine. Similar to a bagel, it is first boiled and then baked in the oven, resulting in a crispy exterior and chewy interior. Bublik is sweeter than a classic bagel and is often sprinkled with sesame seeds or poppy seeds. Its history dates back hundreds of years, and many families have their own variations. It is most often enjoyed for breakfast or as a snack with butter, cream cheese, or sweet toppings.

    Preparation Steps

    1

In a small bowl, combine the lukewarm milk, yeast, and one tablespoon of sugar. Let it stand for 10 minutes until foamy.

    2

In a large bowl, whisk together the flour, remaining sugar, and salt.

    3

Add the yeast mixture, beaten egg, and melted butter to the flour mixture. Knead until you get a smooth, elastic dough.

    4

Cover with a kitchen towel and let rise in a warm place for about 1 hour, or until doubled in size.

    5

Divide the risen dough into 8 equal pieces. Shape each piece into a long rope and connect the ends to form a ring.

    6

In a large pot, bring water to a boil. Add honey. Boil the bubliks one at a time for about 30 seconds on each side.

    7

Remove the bubliks to a wire rack to dry slightly, then sprinkle with sesame seeds or poppy seeds.

    8

Preheat oven to 400°F (200°C) and bake the bubliks for 20-25 minutes, or until golden brown.

    9

Let cool slightly before serving with butter, cream cheese, or jam.
