Slice the beef into very thin pieces. In a large bowl, combine the soy sauce, brown sugar, sesame oil, minced garlic, and grated ginger. Add the beef and let it marinate for 30 minutes, or even overnight for a more intense flavor.
Slice the onion and green onions into thin strips. Prepare the cooked rice for serving.
Heat a large skillet or wok over medium heat and add a little oil. Add the marinated beef and stir-fry quickly for 5-6 minutes, until browned but not dried out.
Add the onion slices and cook for another 2 minutes, until the onion is slightly softened but still crispy.
To serve, place the cooked rice on plates, top with the stir-fried bulgogi beef, and sprinkle with sesame seeds and chopped green onions.
