In a large bowl, combine the ground beef, soy sauce, brown sugar, crushed garlic, grated ginger, sesame oil, toasted sesame seeds, and finely chopped green onions. Mix thoroughly to ensure the flavors are well combined.
Divide the mixture into 4 equal portions and form into hamburger patties.
Heat a grill or skillet over medium heat and cook the patties for 3-4 minutes on each side, or until fully cooked through.
Halve the hamburger buns and toast the cut sides until golden brown.
Assemble the burgers: Place a lettuce leaf on the bottom bun half, top with a bulgogi patty, a slice of cucumber, kimchi (if using), and spread with mayonnaise. Finally, top with the other bun half.
Serve the Bulgogi Burgers hot, accompanied by french fries or a fresh salad.
