Season the beef patties generously with Cajun spice blend, salt, and black pepper on both sides. Heat olive oil in a skillet over medium-high heat. Cook the patties for 3-4 minutes per side, or until cooked through.
When the patties are almost done, top each with a slice of cheddar cheese. Cover the skillet and let the cheese melt completely.
Toast the hamburger buns in a skillet or on a grill until the cut sides are crispy and golden brown.
Thinly slice the tomatoes and red onion. Prepare the lettuce leaves and sliced jalapeños.
Assemble the burgers: spread garlic mayonnaise on the bottom bun, add lettuce, the cheesy Cajun-spiced patty, tomato and red onion slices, and jalapeños.
Top with the remaining bun and gently press down. Serve immediately with french fries or sweet potato fries.
