Prepare all the ingredients. Halve the candied cherries and break the chocolate into smaller pieces.
Separate the eggs, placing the egg whites in a clean bowl. In another bowl, combine the egg yolks with the sugar, vanilla sugar, and candied cherries.
Pour the milk and butter into a saucepan and heat over medium heat. Do not let the mixture boil; warm it gently.
Place the chocolate and butter in a small bowl and melt over a double boiler. Once the chocolate has melted, pour it into the egg yolk mixture and stir well to combine.
Whisk the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture.
Sift the flour and gradually add it to the chocolate mixture. Mix well to combine.
Grease a soufflé dish with butter, then pour in the chocolate mixture. Arrange the candied cherries on top.
Bake in a preheated oven at 350°F (180°C) for 20-25 minutes, or until the soufflé has risen nicely and is golden brown.
Once done, let it cool slightly, then serve warm, sprinkled with a few extra candied cherries on top.
