Candied Ginger Scones

The scone is a classic pastry of English tea time, and we have now prepared it in a special candied ginger version. Ginger adds warmth and a slightly spicy taste to the pastry, while the candied ginger remains delicately sweet and soft in texture. TIP: If you want an even more intense flavor, you can add a little grated fresh ginger to the dough. Do not overwork the dough, because the scone should remain light and soft! This scone is the perfect choice with a cup of lemon tea, or even as an afternoon treat.

10 g Baking Powder
1 pinch Salt
5 g Ground Ginger
80 g Candied Ginger
80 g Butter
40 g Honey
120 ml Milk
1 Egg

    Preparation Steps

    Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.

    In a large bowl, whisk together the whole wheat flour, baking powder, salt, and ground ginger.

    Cut the cold butter into small cubes and rub it into the flour mixture until it resembles coarse crumbs.

    Chop the candied ginger into small pieces and add it to the flour mixture.

    In a separate bowl, whisk together the honey, milk, and egg.

    Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; the dough should be soft.

    On a lightly floured surface, pat the dough to about ¾ inch (2 cm) thickness. Cut into triangles or rounds using a cookie cutter.
