Wash the cauliflower, break it into florets, and simmer in salted water for 10 minutes, or until partially cooked. Drain and let cool slightly.
Finely chop the onion and garlic. Heat the oil in a skillet over medium heat, then sauté the onion until translucent.
Add the ground pork and cook until browned, seasoning with salt, pepper, and Hungarian sweet paprika. Cook for 10-15 minutes, until the pork is thoroughly cooked.
Lightly grease a baking dish and layer half of the cauliflower florets in the bottom.
Evenly spread the ground pork mixture over the cauliflower layer, then cover with the remaining cauliflower florets.
Spread the sour cream evenly over the top and sprinkle with the grated cheese.
Bake in a preheated oven at 350°F (180°C) for about 25-30 minutes, or until the cheese is golden brown and bubbly.
Remove from the oven, let it rest for 5-10 minutes before slicing and serving.
