Preheat the waffle iron and grease it lightly with oil or butter to prevent sticking.
Pour a portion of the batter onto the waffle iron, sprinkle with grated cheese, and cook for 3-4 minutes until golden brown.
Remove the finished waffle and let it cool on a wire rack to keep it crispy.
Serve fresh, garnished with sour cream or fresh herbs, if desired.
