500 g All-purpose flour
1 tsp Salt
200 g Butter
150 g Sour cream
25 g Fresh yeast
1 tsp Sugar
100 ml Lukewarm milk
1 Egg
150 g Grated celery
100 g Grated cheese
1 Egg for brushing
20 g Grated cheese for topping

    In lukewarm milk, stir in the sugar, then crumble in the yeast. Let stand for 10 minutes, or until foamy.

    Grate the celery and squeeze out any excess moisture.

    In a large bowl, sift in the flour, add the salt, and rub in the cold butter until the mixture resembles breadcrumbs.

    Pour in the yeast mixture, sour cream, and whole egg. Knead the dough until it is smooth and elastic.
