Cevapcici served with ajvar and bread

Cevapcici

Cevapcici is one of the most well-known dishes in Balkan cuisine, originally derived from Turkish kebab. Over the course of its culinary evolution, it has been adapted to local tastes, and has now become an iconic Balkan grilled dish. The small sausages made from spiced ground meat perfectly complement fresh ajvar and crusty bread, which are the best accompaniments to this simple yet delicious meal. It is an excellent choice for family gatherings and friendly barbecues.

    Preparation Steps

    1

In a large bowl, combine the ground beef and ground pork with the minced garlic, finely chopped onion, Hungarian sweet paprika, salt, pepper, and ground cumin.

    2

Add the baking soda and cold water, then knead the mixture thoroughly until it is smooth and easily shaped.

    3

Cover the bowl with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld.

    4

Shape the mixture into small sausages (about 4 inches long and ¾ inch in diameter), and place them on a tray.

    5

Preheat a grill or grill pan over medium-high heat. Cook the cevapcici on all sides for 2-3 minutes, until nicely browned and cooked through.

    6

Serve hot with fresh bread, ajvar, and chopped red onion. You can also serve it with a salad or grilled vegetables.
