Pour the milk into a saucepan and heat over medium heat until lukewarm. Then, pour it into the egg yolk mixture.
Stir the grated cheddar cheese into the milk and egg yolk mixture.
Whisk the egg whites into stiff peaks, and gently fold them into the cheese mixture.
Grease a soufflé dish with butter, then pour in the cheese mixture.
Bake in a preheated oven at 350°F (180°C) for 20-25 minutes, or until the soufflé has risen nicely and is golden brown.
Once ready, let it cool slightly, then serve warm.
