Thoroughly wash the cherries, remove the stems, and pit them. Tip: If you don't have a cherry pitter, a straw can help remove the pits easily.
In a medium saucepan, pour the apple cider, add the honey, cinnamon stick, and cloves. Stir until the honey dissolves.
Add the pitted cherries to the saucepan and heat the drink over medium heat. Tip: Avoid boiling to preserve the fruity aroma and color of the cherries.
Add 2 tablespoons of freshly squeezed lemon juice to balance the sweetness and refresh the flavors.
Stir well and let it steep for 5 minutes off the heat to allow the flavors to meld.
Before serving, strain the cider and arrange the cherries as a garnish in the glasses. Garnish with fresh mint.
