Wash and peel the potatoes, then dice them into small cubes. Parboil them in salted water until partially cooked, but not fully soft.
Dice the chicken breast and smoked bacon. Finely chop the onion and garlic.
In a skillet, render the fat from the bacon. Add the oil and saut茅 the onion until translucent.
Add the chicken breast, season with salt and pepper, and cook until lightly browned on all sides. Sprinkle with Hungarian sweet paprika and mix well.
Drain the parboiled potatoes and, in a separate skillet, saut茅 them in a little oil until golden brown.
Once the chicken is cooked through, add the fried potatoes and gently toss to combine, being careful not to break the potatoes.
Sprinkle with chopped parsley and serve fresh with bread or pickles.
