In a bowl, combine the ground chicken breast with salt, black pepper, garlic powder, ginger, and a squeeze of lime juice. Form the mixture into 4 equal-sized patties.
In a hot skillet or on a grill, cook the chicken patties for 4-5 minutes on one side, then flip.
After flipping, place a slice of cheddar cheese on each patty. Cover the skillet to allow the cheese to melt.
Halve the hamburger buns (or pita or bao buns). Spread with butter and toast until golden brown in a skillet, or steam if using bao buns.
Spread mango chutney on the bottom half of each bun, then top with a lettuce leaf.
Place the cheese-covered chicken patty on top, followed by kimchi and cucumber slices.
Spread a little hoisin sauce or gochujang (depending on whether you want an Asian or Indian flavor profile) on the top half of the bun before closing the burger.
Serve immediately with french fries or a fresh Asian or Middle Eastern salad.
