Season the chicken thighs with salt and pepper. Heat the oil in a large skillet over medium-high heat and sear the chicken thighs on both sides until golden brown.
In the same skillet, sauté the finely chopped onion and garlic until translucent.
Stir in the Hungarian sweet paprika, then add the water. Return the chicken thighs to the skillet.
Cover and simmer over medium heat until the chicken thighs are tender, about 40 minutes.
Stir in the sour cream and cook for another 5 minutes, allowing the sauce to slightly thicken.
Before serving, garnish with fresh parsley.
