In a bowl, combine the ground beef with salt, pepper, and chili powder. Form the mixture into four equal-sized patties.
Heat olive oil in a skillet over medium-high heat. Cook the patties on both sides until golden brown and cooked through. During the last minute of cooking, top each patty with a slice of smoked cheese and let it melt.
Toast the insides of the burger buns until lightly golden and crispy.
Thinly slice the tomatoes and red onion. Prepare the iceberg lettuce leaves.
Assemble the burgers: Place lettuce on the bottom bun, followed by the smoked cheese-topped patty, tomato slices, red onion slices, and jalapeño slices. Spread a dollop of mayonnaise on top, and cover with the top bun. Serve immediately.
