Chili chocolate dumpling served

Chili Chocolate Dumplings

The unusual pairing of chocolate and chili is not new: the Aztecs already used cocoa and hot peppers together, as they believed that this combination gave strength and energy. Desserts served in dumpling form recall the sweet traditions of Asian cuisine, while paired with European chocolate dessert techniques. This modern dessert has become popular in gastronomy worldwide. The chili chocolate dumpling is a perfect choice for special occasions, a romantic evening, or even a creative dessert competition. When serving, it can be supplemented with some fruit (e.g. raspberries or orange slices), but it also provides an intense experience on its own. You can feel free to modify the ratio of chocolate and chili if you want a milder or more intense flavor. You can also add a little orange zest to the filling if you want a more refreshing taste. When cooking the dumplings, always use boiling water and do not overcrowd the pot so that they can cook nicely.

    Preparation Steps

    1

To prepare the dough, combine the flour and a pinch of salt in a bowl. Gradually add the water while continuously mixing with a wooden spoon, then knead until you get a smooth dough. If the dough is too sticky, add a little flour. The dough is ready when it is elastic but doesn't stick to your hands. Cover and let it rest for 20 minutes.

    2

While the dough is resting, prepare the filling: melt the butter over low heat, then add the chopped dark chocolate. Stir until completely melted. Then sift in the cocoa powder and stir until smooth, then add the powdered sugar, chili flakes, and egg. Stir until you get a homogenous, thick cream. You can reduce or increase the spiciness of the chili according to your taste.

    3

Roll out the dough thinly on a floured surface, then use a glass or cookie cutter to cut out circles. Place a teaspoon of chocolate filling in the center of each circle.

    4

Fold the dough circles in half, then press the edges with your finger or a fork to prevent the filling from leaking out. It is important that the edges are well sealed, otherwise they will open during cooking.

    5

Bring water to a boil in a large pot, then carefully drop in the dumplings. Cook them over medium heat for 4-5 minutes, or until they float to the top – this indicates that they are done.

    6

Remove the cooked dumplings with a slotted spoon and let them drain briefly. Serve warm, drizzled with a little melted dark chocolate or sprinkled with powdered sugar.
