25 g Granulated Sugar
5 g Salt
280 ml Warm Water
80 g White Chocolate
3 g Chili Flakes
20 g Honey
1 Egg
30 ml Milk

    In a large bowl, combine the flour, yeast, sugar, and salt. It's important to keep the salt away from direct contact with the yeast, as it can inhibit the yeast's activity.

    Add the warm water and mix with a wooden spoon until the dough comes together. Once it's manageable, start kneading by hand for about 10 minutes until smooth and elastic.

    Cover the dough with a kitchen towel and let it rise in a warm place for about 1 hour, or until doubled in size.

    Once the dough has risen, knead in the finely chopped white chocolate and chili flakes. Gently work them in so they are evenly distributed.

    Divide the dough into 8 equal pieces and form them into balls. Using your finger, make a hole in the center of each and gently stretch it out to create a bagel shape.

    Bring a large pot of water to a boil, then reduce the heat to a simmer. Boil the bagels one at a time for 30 seconds on each side, then place them on a baking sheet lined with parchment paper.
