Melt the dark chocolate in a double boiler, then let it cool slightly.
Whip the heavy cream until stiff peaks form. Gently fold in the mascarpone cheese, powdered sugar, and vanilla extract.
Take out a smaller portion of the mascarpone cream and mix it with the melted chocolate to create a chocolate cream.
Layer the ingredients in glasses or parfait dishes: start with a layer of ladyfingers, followed by a layer of chocolate cream, and then a layer of mascarpone cream.
Repeat the layering process until the glass is full. Sprinkle chocolate shavings on top as a garnish.
Refrigerate the parfaits for at least 1 hour to allow the flavors to meld. Serve chilled.
