In a medium saucepan, bring the milk to a simmer over medium heat. Add a pinch of salt and the sugar. Stir until the sugar is completely dissolved.
Add the rice to the hot milk and cook over low heat for 20-25 minutes, stirring constantly, until the rice is tender and the milk has thickened.
Once the rice is cooked, add the chopped dark chocolate, butter, cocoa powder, and vanilla extract. Stir until the chocolate is completely melted and the mixture is smooth.
Let the chocolate rice pudding sit for a few minutes to allow the flavors to meld. If needed, add a little more milk to reach the desired consistency.
Serve warm or cold. Garnish with grated chocolate and whipped cream for an extra creamy treat.
